Honey Cupcake with Apricot Goat Cheese Frosting

Don’t be scared about the goat cheese, this cupcake was really good!

This cupcake is especially good for those of you out there who say, “I don’t really like super sweet cupcakes”. Even though I think you are crazy, the goat cheese really calms down the sweetness of the cupcake.

Fun fact! Did you know that Agave is an excellent substitute for honey? It is also slightly less sweet which I think really works for this recipe. Once upon a time, I bought the Costco size of Agave, aka Agave for the rest of my life, so I always use it as a substituteΒ and I am never disappointed!

I like my frosting to be fluffy, and I have had some bad experiences with adding honey to buttercream, so I did not include the honey when making the frosting. Also, you might need to add more powdered sugar depending on the goat cheese that you use. Once you mix the butter, cream cheese, and goat cheese, add the 1 cup of powdered sugar, then add more sugar depending on the consistency.
